Het is een veelgebruikt ingredi\u00ebnt in de Mediterrane keuken: ratatouille, Marokkaanse zaalouk, Griekse moussaka&#8230;<\/span><\/strong><\/p>\n<p>De aubergine is caloriearm (tenzij u ze helemaal onderdompelt in olie!), vezelrijk en een bron van calcium en vitamines. Het vruchtvlees moet steeds goed doorbakken worden.<\/p>\n<p>De rijpe vrucht kan bitter smaken, wat de afkeer van uw kleine tafelgasten kan opwekken. Verwerk de aubergine daarom in een mengeling met aangename en\/of vertrouwde smaken: tomaten, look, mozzarella\u2026 of curry, kokosmelk\u2026<\/p>\n<p>Deze keer baseert Fred zich op een Italiaans recept uit het magazine \u2018Saveurs\u2019, dat hij als gratin opdient in vuurvaste schoteltjes\u2026 Vanwege zijn slechtziendheid bereidden we dit gerecht met vier handen, want sommige handelingen zijn gevaarlijk voor de vingers: het snijden van de aubergines in gelijke sneden, het bakken in de oven\u2026 zaken u best niet overlaat aan uw kinderen! Zij kunnen wel de schotels in lagen garneren, iets wat ze maar al te graag zullen doen.<\/p>\n<h3>Voor 4 personen:<\/h3>\n<ul>\n<li>2 aubergines<\/li>\n<li>4-5 grote rijpe tomaten<\/li>\n<li>1 kleine ui<\/li>\n<li>2 bolletjes mozzarella<\/li>\n<li>50 g Parmezaan<\/li>\n<li>1 teentje look \u2013 basilicum \u2013 tijm \u2013 laurier &#8211; olijfolie \u2013 fleur de sel \u2013 peper<\/li>\n<\/ul>\n<p>Was de groenten en kruiden zorgvuldig.<\/p>\n<p>Pel en versnipper de ui.<\/p>\n<p>Schil de tomaten en verwijder de pitten, snij in blokjes.<\/p>\n<p>Warm een beetje olie op in een pan en bak de ui aan. Voeg de tomaten, look, tijm, laurier, wat peper en zout toe. Op een zacht vuurtje laten stoven tot u een dikke saus verkrijgt. Gehakte basilicum toevoegen.<\/p>\n<p>Snij de aubergines in fijne ronde plakjes. Bak ze voor in de oven of een pan met wat olijfolie.<\/p>\n<p>Snij de bolletjes mozzarella in plakjes.<\/p>\n<p>De oven voorverwarmen op 180\u00b0.<\/p>\n<p>De vuurvaste schoteltjes invetten. Leg een plakje aubergine, dan een plakje mozzarella, dan overgieten met wat tomatensaus. Herhalen tot alles opgebruikt is. Bestrooien met geraspte Parmezaan en in de oven zetten (ong. 15 min.), tot het goudbruin kleurt.<\/p>\n<p>Om de aubergine minder olie te laten opnemen: spreid de plakjes op een bakplaat, met een borsteltje wat olijfolie aanbrengen en een twintigtal minuten in de oven plaatsten bij 180\u00b0. Of laat ze enkele minuten meekoken in kokend water en droog ze met keukenpapier voor u ze bakt.<\/p>\n<p><strong>U kunt ook een \u2018grote gratin\u2019 maken door vellen lasagne tussen de lagen te voorzien\u2026 Mmm mamma mia!
