Deze keer koos Fred voor rabarber als voorjaarsgroente. Jazeker, rabarber is wel degelijk een groente vanuit botanisch oogpunt\u2026 ook al eten we ze vaak als een vrucht: in moes, confituur, taarten enzovoort.<\/strong><\/p>\n<p>Rabarber is een levendige plant die makkelijk groeit in de meeste tuinen. Enkel de rozerode en groene stengels zijn eetbaar. In bereidingen smelten ze in de mond en zorgen ze voor een zurige toets. Rauw vinden de meeste mensen ze niet lekker, maar laat ze zachtjes koken met wat suiker en eventueel een paar kruiden (vanille, kaneel, gember\u2026) of samen met andere vruchten (appels, aardbeien, frambozen\u2026). Eet nooit van de bladeren, die bevatten oxaalzuur en zijn giftig.<\/p>\n<h3>Voor 6 cupcakes<\/h3>\n<ul>\n<li>300 g rabarber<\/li>\n<li>300 g zelfrijzend bakmeel<\/li>\n<li>100 g suiker<\/li>\n<li>2 koffielepels bruine suiker<\/li>\n<li>1 cc kaneel<\/li>\n<li>2 eieren<\/li>\n<li>20 cl melk 100 g gesmolten boter<\/li>\n<\/ul>\n<p>Reinig de rabarberstengels zorgvuldig, schil ze en snij ze in kleine stukjes. Zet ze 10 minuten op een zacht vuurtje en laat dan uitlekken.<br \/>\nDe oven voorverwarmen op 180\u00b0.<br \/>\nKlop de eieren op met de melk en de boter<br \/>\nMeng het meel, de suiker en de kaneel. Voeg het eiermengsel toe en kneed tot een gladde massa.<br \/>\nVoeg de stukjes rabarber erbij en doe alles in cupcakevormpjes.<br \/>\nBestrooi met bruine suiker en laat ongeveer 25 minuten bakken in de oven tot ze het vormpje mooi vullen en goudbruin zijn.<br \/>\nHaal uit de oven, laat een beetje afkoelen en haal ze uit de vormpjes.<br \/>\nOpdienen met een groot glas melk\u2026<\/p>\n<p>Rabarber is de kampioen van de vezels en de calcium. De groente bevat weinig suiker en veel water, het is dus een caloriearme hap. Ten minste als je niet teveel suiker en<\/p>\n<p>vetstof toevoegt.<\/p>\n<p>De allerkleinsten zijn doorgaans niet dol op de zurige smaak, maar deze zachte en smeu\u00efge versie lusten ze allemaal!<\/p>\n<p>Deze cupcakes van Fred zijn makkelijk te bereiden en je stopt ze zo in de brooddoos.
